Delicacies of Croatian Gastronomy:

  • Istrian and Dalmatian homemade pršut (prosciutto ham), Istrian sheep cheese
  • lamb with potatoes prepared under a metal cover
  • ravioli, fuži (type of homemade pasta)
  • Istrian maneštra (vegetable stew with spring corn, popular in the whole of north Adriatic). It could be served as a soup if the main ingredient are vegetables (most usually) but it can be served as a main course if it is made of "stronger ingredients" such as meat.
  • various types of fish, shells, crabs, octopus, squid, scampi, mussels, oysters etc.
  • "brudet" is prepared with different types of fish (grooper, conger, eel), pašticada
  • mushrooms specialities

Delicacies:

Istarska supa - is prepared in bukaleta (an earthen jug) with slightly warmed red wine (Teran or Borgonja) by adding a little sugar, oil, pepper and a slice of toasted bread. Put in a spoon and offer to the thirsty friend.

Fritule (type of doughnut), kroštule with almonds.

We recommend:

Wild asparagus - is another favourite delicacy of the Istrian region. Although asparagus is naturally bitter, it is extremely tasty when prepared with eggs, as a salad or as a side dish. Very healthy and an excellent diuretic agent.

Truffles - although you can taste many different types of mushrooms in Istria, such as the well-known and very tasty "Martinčice" and "Lisičice", probably the most famous is the Istrian Truffle. There are many different ways to use this wonderful delicacy, including combining with fuži, omelettes, sprinkled over steak and game. Truffles may also be used in preparing pastries

Drinks:

White wines: Malavazija, Pinot and Muškat. Names of wines such as Grk from the island of Korcula and Parc from the island of Hvar bear witness to this. Famous wines include Dingač and Pošip from Pelješac Peninsula; Babic from Primošten; Vugava and Plančić from the island of Hvar… as well as Pošip and Grk from the island of Korčula; Marastina from the island of Lastovo; Malvazija from Dubrovnik, and so on. Furthermore, there is Prošek (a sweet desert wine), very strong grape brandy, herb flavoured brandies and liqueurs (Maraschino, Vlahov).
